Summary/Abstract: Food resources are important for ensuring national food security. The text examines the production of basic food products from agriculture in Bulgaria, as an important source for the formation of the country’s food resources. Innovations used in the production of the studied products that have a positive impact on the quality and quantity of production are considered. Proposals are given for innovations in productions that do not apply them. Based on the analysis and assessment of the consumption of basic products, from the point of view of their biological value, problems related to food security are identified. A view is being developed that an important element of security is the emphasis on the connection between national food resources - innovative production technologies – nutritional functionality of food products. These issues are considered through the prism of existing dynamic changes and in the conditions of uncertainty.
