Summary/Abstract: In recent years, with the rapid increase in the world population, the problem of Access to healthy food has emerged, diseases and deaths due to nutritional problems have increased. People's consumption habits have changed as a result of rural-urban migration. In addition to be in gun healthy, fast-consuming products with high additives have changed the eating habits of societies. The new generation does not recognizetr aditional flavors and dishes. The forgetting of these flavors has limited the production of traditional products, leading to the decline of rural areas and the product ion made there. Ensuring rural development will reduce excessive migration to cities and many accompanying problems. The aim of this study is to evaluate the situation of rural areas, to contribute to the production and marketing of these products in rural areas, and to bring a new perspective to rural development. In this review study, document analysis method was preferred to collect data. As a result of the research, it was revealed that rural areas are becoming increasingly idle, there has been a decrease in the production of it emsoriginating from the seregions, the foods that are manufactured pose a risk to food safety, and the product so riginating from cooperatives and those with Geographically Indicated status have a greater market sales.
