Summary/Abstract: The goal of the paper is the identification of the most important conditions of organic food markets changes in the first decade of the XXIst century. The characteristics (aimed at the goal) refers to the global scale, regional scale on the example of EU and macroeconomic scale on the example of Poland. Basing on statistical data it was stated that from the 1990s the dynamic development of organic farming is taking place worldwide (especially in the developing countries). The process is strongly influenced by the absorption level of two largest markets – the USA and EU. In the EU the sales value increase is the result of institutional and financial support of Common Agriculture Policy. Organic farming is poorly developed in EU-12 countries but it develops in faster pace there. It also refers to Poland where at the first stage production possibilities started to increase and on the demand-side only the symptoms of positive changes are observed. The important barrier of market development is distribution system. Nevertheless, it can be stated that there are good perspectives for further market development.
