Summary/Abstract: Efficiency of the spare bakery shops functioning on the territory of northeastern Europe is studied. Previously unpublished materials are introduced into scientific circulation. The research of archival records processed by the method of mathematical statistics, helped to reveal deficiency/surplus fill rate of spare bakery shops. The analysis of obtained materials showed that the work of spare bakery shops was not effective enough from the standpoint of providing population with bread and flower products in case of a large-scale crop failure. The study is based on the research results dealing with the problem of food supply security on the territory of northeastern Europe. Such experimental study was carried out for the first time. Further research of the obtained data on the basis of comparative-historical analysis will assist in the assessment of spare bakery shopsʼ efficiency in the Russian North.
