Summary/Abstract: The paper aims at making a basic outline of the changing definition of the term “science of cookery” in Indian tradition. Doing this references to ancient authors and their lost works have been explored. It is argued that remnants of such texts in other sources mirror a partly overlap between real cookery and cookery with medical purposes. This may serve as a clue to the understanding the basic change that all the extant texts which are not prior to the sixteenth-seventeenth centuries belong to medical literature, and no ancient textbook on cookery has survived. Le présent article touche au « savoir de la cuisine » dans la tradition indienne. Ont été explorées les références à des auteurs anciens et leurs traités perdus. On argument que des tels textes dans d’autres sources reflètent un écart partiel entre le savoir de la cuisine réelle et le savoir de la cuisine à but médicinal. Cela peut servir comme une indication pour la compréhension d’un changement fondamental : tous les textes de ce genre qui ne sont pas antérieurs aux XVIe-XVIIe siècles appartiennent à la littérature médicale, et aucun d’eux n’a pas survécu.
