Summary/Abstract: The article presents data related to the production and consumption of butter and the current regulations relating to butter. Discusses the division of milk fats, the use of permitted additives, the information requirements placed on the package, the types of adulteration of butter and food quality inspections. The paper presents results of a survey on the butter and the possibility of promotion and legal protection of regional and traditional butter.
