Summary/Abstract: Gluten-free products are the basis for the elimination diet which is the only way to treat people with gluten intolerance. The currently existing legal regulations of food products in the European Union and Poland increase safety of their use, and a growing choice of gluten-free products makes celiac people easier to balance their daily menus. Gluten-free products in the Polish market are still dominated by gluten-free wheat starch-based products, with worse nutritional value and trace gluten content, and very popular are gluten-free snacks rich in simple sugars and saturated fat. Nutritional value of gluten-free diet may improve enrichment or fortification of gluten-free products, and their widespread presence in medium-sized grocery stores and catering facilities could help balance an everyday menu.
