Summary/Abstract: The main aim of this study is to research the influence of polysaccharide coatings on the quality and the changes in the storage of fresh fruits and vegetables and the related regulatory requirements for them. It is based on an in-depth study of numerous literary sources. The collected information is summarized and analyzed by a descriptive-analytical method. In conclusion, it is summarized that there are no separate regulations about the usage of polysaccharide coatings in the European Union. The results of this study show that the polysaccharide coatings as well have a positive influence on the changes in physico-chemical, sensory and microbiological parameters, weight loss of fresh fruits and vegetables as prolong their storage.
