Summary/Abstract: The aim of this article was to review legislation and literature for the presentation of allergic consumer safety issues resulting from the provision of reliable information on the presence of food allergens in food intended for retail and as a food service product. The legal requirements concerning the provision of information on allergenic ingredients in the EU food market are presented. The legislative implications for packaged food manufacturers and catering companies are discussed. Challenges of allergens management, cross contamination risk, and staff training are identified. The various formats in which allergen information can be provided for non-prepacked foods by food businesses are characterized. The results of a questionnaire survey on knowledge of food allergy and the formats of allergen information provided by staff of selected catering companies in Poland are presented.
