RITUAL FOOD FROM THE REGION OF HASKOVO

Summary/Abstract: On the basis of rich field material (most of which is published for the first time) the communication presents the ritual food prepared in the region of Haskovo. Some most important groups of food are discussed, special attention being paid to the preparing and consumption of the so-called keshkek (wheat soaked in hot water and then dried), which is the principal ritual food for almost all calendar and family holidays. With a view to clarifying the functions of the various types of ritual food and the meaning of ritual food as a whole, a detailed analysis is made of the dinner table as the place and means of social contacts. Special attention is also paid to the family table (in the context of some important calendar festivities), the wedding feasts (as the most important component of family festivities) and the all-village feasts (the so-called kourban). The specific intertwining of pagan and Christian elements and views in the building of the rich symbolism of ritual food is studied. The special importance of bread as one of the most important ritual objects in general is pointed out; particular attention is devoted to the ancient roots of the rich symbolism associated with the egg and with grain; the apotropaic properties of salt are also mentioned. In spite of its regional territorial scope, the study, nevertheless, gives an idea of an important component of traditional Bulgarian culture.
