Summary/Abstract: The article is an introduction to research on the history of alcoholic drinks produced in the lands of Old Poland such as: liqueurs, mead, beer or starka (mature rye vodka, aging in an oak barrel). From the early times humanity has benefited from the properties of these alcoholic drinks. The knowledge of chemical processes during fermentation and distillation has been a mystery for centuries. Probably the secret science was known only to a few people and has been passed from generation to generation with unique recipes. The tradition of alcohol production in Polish land is very old and wellremembered in the spoken language, but this is not always confirmed by written sources. Thus, this situation leads to archaeological research, which may shed some light on the questions that puzzle us.
