Summary/Abstract: The aim of the study was to analyze selected determinants of innovation activities of small and medium-sized enterprises on the market of products of animal origin. It shows the influence of internal factors, ie. size, specialization of production and the share of employees with higher education on capability of the entities of innovative activity. Product and process innovations were most often introduced in the processing. The greatest level of innovation characterized the processing of milk in medium-sized enterprises. The least active in this area were poultry meat processing companies, as well as small entities. In addition, they have a relatively lower proportion of employees with higher education than in the meat and poultry without milk. The studies used were so far lacking this type of analysis for the food sector.
