Summary/Abstract: This study refers to a brief evolution of food historiography in the Romanian space. Along with the facts related to the history of habitat, clothing and fashion, the history of food completes the picture of material and cultural civilization of each people. The main aspects of Western historiographical research, based on interdisciplinarity and comparative studies, have been related to food shortages. Many studies study the numerous periods of famine that led to severe food crises and demographic declines. Romanian food research has intensified in recent years and there has been a growing number of books, studies and articles which address the metamorphoses of taste and complex changes in the world of food and its preparation. In the research of food structures, the basic concern of many historians has been to capture the gastronomic peculiarities that define the food identity of a community. Historical research has taken into account the social and cultural levels, the differences in mentality between the rural and urban areas, which have created food diversity. Although food seems to be stuck in the patterns of the times, food changes, changes in the universal gastronomy have been made, depending on a number of religious, cultural, economic and social factors.
