Folk diet in the Upper Jizera region: Changes and transformations during the 20th century and its current state (Part 2)

Summary/Abstract: This field research focuses on transformations and changes in the traditional folk diet in Giant Mountains, Upper Jizera region, during the 20th century to the present day. The traditional process of producing food, cooking, and transferring the knowledge is explored in both Czech and remaining German families to show both the differences and the diffusion between both cultures. Everyday and festive cooking is analysed with a focus on fading or preserving traditional food such as potato flat cakes, the sweet mushroom Christmas dish, or the processing of traditional red cabbage. The cabbage farmers have had a substantial influence on local food culture and their fate during the communist period as well as their present efforts are investigated. The spreading of common Czech Christmas dishes into the region and their coexistence with local traditions demonstrates the strong position held by traditional folk cuisine in the region.
