Summary/Abstract: Archaeologists have been looking for the lost taste of ancient or even older, Palaeolithic wine, and oenologists have made repeated attempts to recreate the taste of ancient wines, using sophisticated chemical analyses of biomarkers and DNA in the remains of amphorae, as well as preserved agricultural treaties. Who will be the first to reconstruct the ancient wine verbally or physically? Projects of the reconstruction of ancient wines, oftencarried out in cooperation with universities and research institutes involved in the promotion and development of the region, resulted in many kinds of wine which, while produced today, present elements of ancient techniques. The main one is long fermentation in clay pots. Since 2013, wine made in kwerwi in Georgia has been included in the List of the Intangible Cultural Heritage of Humanity. This paper presents important projects and wines produced today which refer expressly to the ancient tradition. It also attempts to identify other ancient traditions that could be included in the UNESCO list.
