SOME TRADITIONAL FOOD DISHES IN CARAȘOVA VILLAGE

Summary/Abstract: Based on the field research carried out in the Carașova village, in the south west Romanian Banat region, this paper presents a few local traditional food dishes. What needs to be especially emphasized is the close connection that some dishes have with traditional rituals and customs of the place. It is also interesting to see the moment and procedure of their preparation, and the fact that there are dishes that are either no longer being prepared or they are slowly disappearing, and new and sophisticated dishes appear in their place. For example, the paper will show how a kiseljica (jam) was prepared, a traditional pastry for оtkukanje, food dishes for smerljanje (ancient traditions related to shepherding), traditional meals on weddings, on slava (celebration) and other occasions, as well as everyday dishes.
