Summary/Abstract: Sixteenth century marked the biggest agrarian and cultural chan-ges in Kosovo. This is best seen in a story exotic in its appearance, but illustrating this change. Cultivation of rice and saffron in the district of Peja speaks about a socio-cultural and economic adaption which hap-pened in Kosovo since that time. Establishment of a stable multi-centennial power, established also cultural effects even in the agrarian production and in the new consume and kitchen itself, having additional identity influences. However, above all of an economic and market orientation by sharing the fate of the great power of the time, being the part of this unique market and of relations which were conditioned by this historical fact.
