Summary/Abstract: This study focuses on traditional local cookings of the Southern Coast of Albania. This area is distinguished for its suitable condition for living, favorable climate and the coastal line, elements that have defined the peculiarities for this region’s food. The study presents some food raw material, main specifics of traditional food and some data on the manners of cooking. A very special importance it is given to the analyses of the grocery bases, focusing as well to the characteristics of everyday food, the conserved food, the traditional cooking with bases of flour, different drinks etc. The relation of this area with other areas during different historic periods regarding culinary influences is another important issue in the article.
