Summary/Abstract: The aim of the article is to present a proposal for parameterization of quantitative changes in business models of restaurant industry companies. As the theoretical basis, the concept of a business model was adopted according to A. Osterwalder and, based on it, the concept of determining the business model variability according to J. Drzewiecki. The article, in addition to an introduction and a conclusion, provides a brief overview of the concept of the business model according to A. Osterwalder, followed by a justification for the choice of the industry and its concise characteristics. The main part of the article presents and characterizes the indicators illustrating the range of quantitative changes made by companies in the sector, broken down into four basic areas of business model: value proposition, customer, infrastructure and finance.
