Antagonistic activity of the lactic bacteria

Summary/Abstract: It was found out that in addition to lactic acid the lactic bacteria, isolated from different natural sources and sour-milk products, produce some substances having antagonistic activity towards a wide range of pathogenic and opportunistic pathogenic microorganisms. The gain of antagonistic properties was often noticed for the lactobacilli but seldom for coccal lactic bacteria. At the same time the antagonistic activity depended on the strain and cultivation conditions.
