Formal and legal determinants of traditional food production in Poland

Summary/Abstract: The article presents the EU and Polish laws governing the conditions of production and protection of traditional foods. These provisions concerning legal protection of names, designs and conditions for marking and labeling as well as sanitary requirements of production. Food of plant and animal origine is protected as well as alcoholic beverages. A limitation of the development of local production are sanitary requirements intended to ensure consumer safety.
