Summary/Abstract: Dynamic changes taking place on the tourism services market imply the development of new forms of tourism aiming to increase tourist traffic on the one hand,and on the other creating a way to promote a given tourist destination. Culinary tourismis considered as traveling in order to learn about and try culinary products of a given geographical region or country. It is also referred to as gastronomic tourism, national cuisine tourism or food and wine tourism. The dynamic development of this form oftourism makes it the subject of research on food and nutrition, tourism and recreation,management sciences, sociology and cultural anthropology. The aim of this study is to analyze product innovation as a factor in the development of culinary tourism in Poland and in selected countries. Particular attention has been paid to regional products, culinary tourist routes, museums of food products, food fairs, festivals related to the regional way of producing food products, events promoting regional dishes and products. The aspect of regional traditions is indicated, which,combined with an innovative approach, determines the development of this form of tourism.
