Summary/Abstract: The article presents the results of analysis of administrative risk assessmentin the European Union and Poland. The author’s goal was toidentify the institutional impact of scientific work on the safety andquality of the products in the EU food chain. The publication was createdby using the dogmatic method, which was complemented by comparativelaw analysis. In the first part of the article, the author discusses thestructure of risk analysis in the food chain. The text presents analysis ofthe activities of the Food Safety Authority in the context of direct andindirect impact on safety and consumer interests. In the further part ofthe article, the author characterizes institutional risk assessment in thefood chain in Poland. The publication also includes references to publicadministration organizations in other EU member states. The final conclusionscontain de lege ferenda postulates and show the essence of theinstitutional risk assessment for safety and quality in the food chain.
