Summary/Abstract: Food industry, including dairy industry, belongs to one of the most important and fastest developing branches of Polish economy. It has influence on space and economic changes. This fact is confirmed by the increase in value of production sale of dairy products (PLN 15149.9 million in 2004 to PLN 20946 million in 2010) and the participation in employment. The researched cooperatives employed from 66 to over 1570 people in 2004 and from 40 to 2300 people in 2010. The largest number of dairy cooperatives united in KZSM is in the Łódź and Wielkopolska Voivodeships – 13 in each. The smallest number of cooperatives is in Lower Silesia, Lubuskie, and West Pomeranian Voivodeships − 1 in each. Mazowsze Voivodeship is the leading region in milk production, with 2190.3 million liters in 2004 and 2772.9 million liters in 2010. Moreover, considering years 2004 and 2010, a 32% increase in value of agricultural products purchase in dairy cooperatives has been noted. The activities of dairy industry have also influence on the state of natural environment. For this very reason dairy cooperatives reduce the use of water in their plants. They achieve this through limiting the number of rinsing in the Clean In Place systems (CIP), or using closed water cooling circuits among others. In order to minimalize the amount of waste the companies use recycling. They use gas heating to reduce the amount of exhaust emitted to the atmosphere. The modernization of plants has decreased the amount of water in liters per kilogram of product. More water is used in plants producing cheese and powdered milk (0.5- 11 liters of water per liter of processed milk).
