Summary/Abstract: An aim of the carried out surveys was to verify, at the level of trade chains, the manner of approaching the issues related to high-quality food. The surveys were of the case-study nature. In three Polish trade chains, there were carried out interviews with the individuals responsible for management systems operation as well as with the employees responsible for purchases. The surveys were carried out in the form of in-depth interviews. There were also carried out observations in two commercial outlets from every chain. In result of the carried out surveys, there authors ascertained that the knowledge of the systems of high-quality food products is minor among representatives of the chains in question. It concerns in particular the products manufactures within the national quality systems. Markings on food products suggesting a higher quality or a place of origin are not taken into consideration while making decisions on introduction of a given product to the sale chain. The visits paid directly the commercial outlets indicate an insufficient training of shop attendants related to high-quality food products. The practical implications of the obtained results indicate the need to conduct information actions on the systems of high-quality products as well as an increase of supervision over the market by the state administration bodies. The article is of the research nature.
