Summary/Abstract: Caper plants in different countries around the World are used for different purposes according to the variety of plants. For the treatment of diseases in the field of health, cosmetic and insecticide production, wood, the basic material of ornamental plants, etc. are used for purposes. In our country, especially in the Black Sea region is used in the fight again sterosion. In the feeding of animals, especially in the ear lyages dinosaurs are the preferred food in the diet is found in research. Besides, caper is a product with inter national value. The choice of people in the nutrition since the old ages, processed flowers and buds are made with. Although it is suitable for cultivation in all conditions and climate, it is known to be a special product of Mediterranean cuisine because it grows naturally in the Mediterranean region. With the new gastronomy understanding that has recently developed, caperine known as medicine land aromatic plant has increased and has gained World wide appreciation as a complement to rich table delicacies. The gastronomic sense of the caper has its own distinctive aroma, appetizing and digestive properties. Inparticular, the processed bud is an important supplement to there cipes used in the kitchen. In other Mediterranean countries other than our country, caper trade is quite high compared to our country. In recent years, even though the cultivation has increased, more production must be made to the country's economy. In the research article, the economics of the caper plant will be emphasized.
