Summary/Abstract: Turkish kitchen, living within the territory of Turkey, roots Ottoman, Selçuklu, and emerged with a kitchen or extending accumulate Ortasya. Its multicultural structure has contributed greatly to the development of Turkish cuisine from past to present. Each region in our country has its own cuisine, cooking tools and methods. Local products grown in the region, climate, lifestyle, culture in the region has shown great influence in the local food. Regional kitchens have an important place in the promotion of the region. Our cultural heritage transferred from generation to generation is in danger of disappearing with our local dishes and original cooking methods. In this study, Kırşehir regional cuisine was examined in terms of regional dishes.
