Summary/Abstract: Vegetable oils have an important function as an energy source in human nutrition. These oils are the most commonly used oil type in Turkish cuisine. Despite the rapid increase in the population in our country in recent years, the production of sunflower oil, which is most used in cooking, has remained limited. This situation has led manufacturers to search for new vegetable oils. One of these oils is sesame oil. Sesame has 50-60% oil content and 20-25% rich protein content. Sesame is a plant used for therapeutic purposes throughout history. In addition, sesame is used as a flavoring in halva, pastries and appetizers. There are also areas of use in industry. One of the most important factors that determine the quality of sesame is its value. Muğla sesame, known as golden sesame, has a wide place in the world market, especially in Japan. According to the results of the research, the fact that the iodine value is higher than the sesame grown in other regions reveals the difference of Muğla sesame compared to other sesame seeds. Muğla is one of the important provinces with its fertile lands and its contribution to the agricultural economy and tourism revenues. In this compilation study; The difference of sesame and Muğla sesame from other sesame, Sesame and its uses in the kitchen were researched. According to the research results; It has been revealed that the nutritional value of sesame is high and Muğla sesame is very valuable, but its use in the kitchen is limited.
